8 ozs Lima beans- about half of a 16 oz bag.
Cook beans according to directions on bag and drain. Cook until just tender. Beans should not be broken. Do not overcook.
1 small onion chopped
½ small green pepper chopped
1 medium tomato chopped
3 cloves garlic- finely chopped
2 tbs ginger- finely chopped
2 tbs oil
1tsp coriander –
1 tsp turmeric
1 tbs curry powder- Use 2 tbs if you do not have cumin, coriander or tumeric
1 tsp chopped pepper such as scotch bonnet or chili
1 tsp salt (optional)
1&1/4 cup water
Heat oil and add onion, garlic, tomato, pepper and ginger. Saute at medium heat for 10 minutes.
Add curry powder, cumin, coriander, turmeric and salt. Stir to combine. Add water and Lima beans.
Bring to boil and simmer for 15 minutes at medium heat. Garnish with thyme or cilantro.
Serve with rice or as a side dish.
