Kapha Cake

Treat yourself to this superfoods cake I just created!

2 tbs ground cinnamon

equal parts of the following nuts and seeds (or mix and match):  hemp, chia, flax, sunflower; brazil, hazelnuts, cashews; unsweetened coconut flakes

equal part carob powder

1 tsp sea salt

3 tbs raw local organic honey

1/4 cup raw coconut butter

1/4 cup warm water

2/3  cup flour of choice (I used buckwheat… It’s very sweet and has complex flavors.)

Mix together all nuts, seeds, carob, sea salt, and cinnamon until everything is coated evenly.  Set aside.  Add honey, coconut butter, and water to a food processor or blender (I used a magic bullet with the grinder blade).  Microwave 2 minutes on high.  Add nut and seed mix to honey liquid.  Microwave 1 minute on high to soften the nuts and seeds.   Blend on high until everything is processed smooth.  Add back into mixing bowl and mix with flour,  Press into pan and bake at 375-400 F for 20-35 minutes.

Frost with melted 88% or higher dark chocolate, chopped dried berries, raw cane sugar, and sea salt.

You could also make two layers and pour melted dark chocolate between them for a decadent treat.
