Kale and Shroom Wraps

1 cup kale, roughly chopped
1/4 cup broccoli florets, finely chopped
1 cup baby Bella mushrooms, diced

2 cloves garlic, sliced (or minced, whatever you like)

1/4 cup diced celery root (It reallymakes this dish!)

2 sprigs marjoram, leaves only (or 1 tbs dried)
4 tbs balsamic vinegar
1 tbs olive oil
1 lavash wrap, burrito wrap, or pita round
1/4 cup vegan cheese

Prep the kale, broccoli, celery root, garlic, marjoram, mushrooms. Marinade with balsamic and olive oil for 1-2 hours or overnight.

Braise the veggie mix in a skillet over medium heat for 7-10 minutes, or until mushrooms are soft.

Fill wrap with veggies, and sprinkle with cheese.

Serve warm.
