Black Candied Almonds

1 cup cane sugar
1/2 cup carob powder
1 tsp freshly ground sea salt
3/4 cup plain unsalted almonds (or any other nut)

Melt the first three ingredients together in a skillet on medium high to high heat.  Stir constantly so the sugar mix doesn’t burn.  Add in nuts, and stir to coat, lowering heat if necessary.  Spoon mixture out onto a sheet of aluminum foil.  Allow to dry completely, then whack with a steak pounder or mallet to separate.
