I was having a sugar fit one night in July, and threw together some random ingredients in a bowl with some Power of 3. The end result was so good that I didn’t even wait long enough to get a good photo of the end product before pigging out!
I’ve shared it with co-workers, family, and Anne-elise at Power of 3, and it’s become an instant classic.
It reminds me a little of those Nestle Chunky bars… except it’s way tastier and infinitely healthier.
Anne-elise is actually including ready-made truffles in her holiday packs, so if you don’t want to make them yourself, you can snag some from her!
Power of 3 Truffles
2 tbs peanut butter
4 tbs shredded coconut, unsweetened
2 tbs raisins, all natural
5 oz 72% or greater dark chocolate
1 tbs Power of 3 (I used plain, but the cinnamon-maple would also be great.)
1 tsp cinnamon
Melt the chocolate and PB together and stir in remaining ingredients. Press into shallow round dish or roll into balls. Top or roll in more shredded coconut for extra pizzazz, if desired. Refrigerate until hard. If using a shallow dish, cut into wedges and serve.
