Candied Orange Slices

This week we received a dozen oranges in our co-op basket so I decided to candy them for the holidays.  They will keep several months if done correctly.  Oh, and most importantly, THEY’RE CRAZY DELICIOUS!

Here’s how I made mine:

10-12 small oranges
6 cups water
6 cups sugar

Slice oranges evenly.  (You can either keep or throw away the ends.  The pithy parts tend to taste more bitter.)

Blanch oranges twice.  Fill a large pot with enough water to cover the oranges and bring to a boil (about 10 minutes).  Drain water, and replace with enough fresh water to cover.  Bring to a boil again.  This time, drain the water, and immediately put orange slices into an ice bath.  Allow to cool.

Put the oranges back into the pot and add water and sugar.  Stir to coat.  Let boil for 10 minutes, and then reduce the heat to medium-high for 30 minutes.  Reduce the heat to a low simmer until oranges become translucent.

Allow oranges to cool for 10 minutes in the pot.  Line cookie sheets with wax paper.  Use a slotted spoon to strain oranges out onto wax paper.  Allow to cool completely.

Toss with more sugar.  Coat slices completely on all sides.

Next, allow to air dry for several days, or oven dehydrate for 4-6 hours.
