My mother recently gave me a T-Fal indoor grill. I’ve never grilled much because of the labor and time involved, but this little gadget makes the process super quick. I prepared this recipe in only 20 minutes, and if you cover the grill with foil there is zero clean up.
I randomly threw together this dish with the scraps I had on hand, and the result took me completely by surprise. Cauliflower is not the most flavorful vegetable, but grilling it with the tomatoes and good vinegar brings out its delicious essence and texture.
I used the dried cilantro I had on hand, and was taken aback at the difference in flavor from fresh cilantro. It is rich, sweet, and has a slight anise twinge to it.
The sweetness of grilled tomato and balsamic vinegar really makes this dish. Grilled tomatoes are a must.
This is definitely a dish I will make again!
1 ripe tomato
1/2 cup chopped onion
1 cup thinly slice cauliflower
1/2 tbs garlic powder
3 tbs fresh dried cilantro
1/2 tsp sea salt
1 tsp olive oil
1 tsp red wine vinegar
1 tsp balsamic vinegar
Cover an indoor grill with aluminum foil. Mix all ingredients together in a bowl and place on the foil to grill. I left the cauliflower fairly crunchy to preserve the texture. If you want it softer, steam it before mixing it with the rest of the ingredients.
