Winter Squash Strata


I made this for my office Halloween party, wrote the ingredients down on a card, and nearly every bit of this dish got eaten– by non-vegans!  :)

1 package whole wheat phyllo dough
3-4 lbs winter squash, cubed into 1 ½ inch pieces
1 med onion, halved and thinly sliced
2 cups kale, chopped
1 package shredded vegan cheese
1 package Smart Bacon, chopped
2 tbs each rosemary and sage (ground fresh or ground dried)
1/2 tsp each salt and pepper (freshly ground)
Olive oil
Chives or other herbs for garnish

Preheat oven to 450 F.  Peel squash, scoop out seeds, and cube. Mix with onions, herbs, salt and pepper.  Cook squash mix on a baking sheet about 35-40 minutes, stirring halfway through.  Mix kale, bacon, and cheese. Set aside. Microwave 1-2 minutes to wilt kale.  Fill a 9 x 11 deep dish pan with aluminum foil, and brush with olive oil.  Layer several sheets of phyllo dough on the bottom, brushing olive oil in between layers.  When squash is cooked, alternate layers of phyllo dough, squash mixture, and kale mixture. (I had 3 layers total.)  Bake until phyllo is crispy, about 15-20 minutes more.  Garnish with chopped chive or other herbs. (I used green onions and basil.)
