8 sun dried tomatoes (not the oil-packed kind)
5 Early Girl tomatoes, quartered
2 tbs chopped red onion
2 garlic cloves
2 sprigs Thyme, leaves only
1 sprig rosemary, leaves only
1 tsp crushed red pepper
Soak the sun dried tomatoes overnight so they puff up. Add everything to a blender and blend until smooth.
Serving suggestion: I used this tasty sauce to make panzanella (bread salad) with 3 tbs sauce to 1 tbs balsamic vinegar to 1 tbs basil pesto. I added button mushrooms and fresh chopped tomatoes. Delicious!
