Grilled Corn Succotash

2 cups water
1 cube Not Beef (or beef bouillion)
2-3 cloves garlic, crushed
1/4 medium onion, rough chop
5 stalks celery, rough chop
3 carrots, rough chop
1 medium tomato, cut into eighths
1 can kidney or black beans, rinsed and drained
3 ears grilled corn, kernels cut off and set aside
2 FRESH bay leaves (not McCormick!!)
1 tsp chilli powder

Boil water, bouillon, garlic, onion, celery, carrots, and bay leaf until the veggies are al dente (soft but not mushy) or about 7 minutes. Add tomato and sautéed about 1 minute. Smash everything 2-3 times with a potato masher to crush the tomato. Add corn and beans. Sauté 2-3 minutes longer. Add more water if desired. Sprinkle with chili powder and serve.
