Wakame Soup

I have recently discovered that I love seaweed. One of my co-workers is Korean, and she was kind enough to share some Wakame with me. Here’s a tasty little vegan soup I made with it:
2 cups boiling water

1 cube Not Beef

1/2 tsp sesame oil

1 tsp Tamari or soy sauce

2 tbs chopped onion

1 tbs minced garlic
3 tbs cubed tofu

1/4 cup dried Wakame, cut into very small strips (it quadruples in size)

Add all ingredients to a large bowl or saucepan. Pour boiling water on top and allow Wakame to rehydrate for about 10 minutes. Reheat if necessary and serve.
