This was the first salad I had in Russia. I had never seen a salad made without lettuce before, and was thoroughly confused when I first saw the sherbet glass full of mayo-covered glop.
I quickly learned that nearly all salads in Russia are made with mayo, and now that I’m back home, I’ve begun to crave the taste!
Once you get past the unfamiliarity of the way in which the ingredients are served, its really super good!
1 golden delicious apple, cored and peeled
1 can green peas
4 hard boiled eggs (optional)
1/4 to 1/2 cup reduced fat veganaise
1/4 cup vegan ham (see May Wah Foods)
5 tbs dried dill or 1/8 cup fresh chopped
salt to taste
several leaves of green leaf lettuce, for decoration
Cut apples, cucumber, egg, and faux meat into small cubes. Add peas, veganaise, dill, and salt. Stir thoroughly. Spoon mixture on top of greens and serve.
