Thai Vinaigrette

I made this dressing to help reduce the inflammation in my knees. It’s pretty tasty, too! It reminds me of Thai curry… Mmmm.

I served it over mixed greens, which are also good for treating inflammation, raw broccoli and yellow zucchini, red cabbage, and sprouted tofu scramble (tofu plus Fantastic World Foods’ Tofu Scrambler.)

Thai Vinaigrette
2 tbs turmeric root powder
3 tbs minced ginger
1 tbs minced garlic
1 tbs lemongrass powder
1 tsp tahini or peanut butter
1 tsp tamari or soy sauce
3 tbs olive oil
2 tbs coconut milk
4 tbs water
4 tbs unpasteurized apple cider vinegar

Blend all until smooth.
