Purple Monster Slaw

More culinary shenanigans today!  The wonderful Rawtarian  and several different natural health podcasts have inspired me to try a diet comprised of 80% raw foods.  I already eat only homemade, whole foods, and about 50% of them are raw, but I’d like to step it up a bit and see how I feel.  

I went to the store for a handful of items, particularly lemons which I needed to make the Rawtarian’s Cashew Cheese Sauce (amazing!), and ended up with a cart full of fresh veggies.  I happened upon a very pretty red cabbage, and absolutely had to have it.  The recipe below is a great, simple slaw I threw together using this amazing vegetable.

Purple Monster Slaw
1 small head of red cabbage, OR two 13 oz bags of shredded cabbage
1 cup diced celery
1 cup diced broccoli florets
1/2 cup shredded celery leaves 
1 1/2 tbs yellow mustard
1/2 cup vegenaise
1/2 cup red wine vinegar
2 tbs apple cider vinegar
2 tbs lemon juice
2 tsp freshly ground salt
1 tsp Penzey’s Sandwich Sprinkle Seasoning (It is a blend of garlic, coarse salt, basil, oregano, rosemary, thyme, marjoram, and black pepper, but totally optional.)
Fresh Cabbage
If you have a food processor, take out the shredder tool and shred the entire cabbage, stem and all.  If you don’t have a food processor, you can grate the cabbage using a mandolin slicer like Chef’s Envy. The stem makes a particularly useful handle for grating on a mandolin slicer. Once you’ve got everything julienned or shredded, dump it into a large bowl.  Add remaining ingredients, toss to combine, chill, and serve.
Bagged Cabbage
If you’ve got bagged cabbage, dump it into a large bowl and add remaining ingredients.  Toss to combine.  Chill and serve.
