Irish Soda Bread

This is recipe is from Trinity Hall Pub in Dallas, Texas. Replace the buttermilk with a vegan option.

2 cups all-purpose flour
2 cups whole wheat flour
1 cups wheat germ
21/2 tsp baking soda
1 tsp salt
1 pint + 1 cup buttermilk

Preheat oven to 350 degrees. Combine all dry ingredients in mixer, with paddle if available, and mix together on low speed. Warm milk to tepid, do not boil, and then add it slowly to the mixing bowl until combined. Spray 12 inch round or loaf bread pans with nonstick cooking spray. Fill with bread mix and carve a cutting line across the top. Bake until brown, approximately 60-75 minutes. When baked, remove from oven and turn out from pan and allow to cool on cooling rack or bread board.
