Apples with PB and Agave

An “easy as hell” snacky-snack for vegans, omnivores, and… rats?

1 apple, sliced thinly
2 tbs crunchy peanut butter
1/2 tbs agave nectar
1/2 tbs coconut flakes
dash sea salt

Drizzle peanut butter and agave over the apples, sprinkle with coconut flakes and salt.  (Yes, salt.  Trust me, it’s a Southern thing, and it’s good, not gross.  Just try it.)  Make it pretty and dig in!

I’d like to develop an agave-violet simple syrup of some kind… any suggestions?  I think such a combination would be absurdly delicious with a Roma or Golden Delicious Apple, a light drizzle of peanut butter, and some coconut flakes.

Another great combination I’m ruminating on is Bosc pears with Woodford Reserve Bourbon simple syrup and fresh vanilla bean coconut ice cream…  Just tell me that doesn’t sound amazing.  

I shared some with the Rat Girls, Vicki and Rosie, and true to form, Vicki licked the sweet part off of hers and stashed the rest, while Rosie (I should have named her Templeton), gobbled as much as she could cram into her fat little rat cheeks.  

I might be turning into Linguini from the  movie Ratatouille.  They kept peeking into the kitchen as I was cutting up veggies for my Ruski Salat, perhaps hoping I would mistakenly leave something tasty within their reach.  Never trust an animal with hands.
