Vegan Collards

I have a pet red eared slider and a main part of his diet is fresh greens. Since the greens often wilt before he can eat them all, I’ve taken to preparing them for myself. Below is the result… Very tasty, filling, and not bitter at all!




Vegan Collards

1/2 cup veggie broth
1/2 cube Not Beef
1/2 tsp garlic powder
2 tbs red wine vinegar
2 tbs lemon juice
2 tbs liquid smoke
4 strips smart bacon, diced
1 tsp grapeseed oil
1 head collard greens, stems removed and finelyshredded

Add broth, Not Beef, garlic powder, liquid smoke, and bacon to large pan with lid. Simmer on low heat until Not Beef dissolves. Add shredded collards, lemon juice, oil, red wine vinegar and salt. Reduce until collards are a deep green.

Amethyst and Emerald Sauté

3/4 cup veggie broth
1 cube Not Beef
1 tsp garlic powder
4 tbs red wine vinegar
2 tbs liquid smoke
1/4 cup white onion, diced
4 strips smart bacon, diced
1 tsp grapeseed oil
1 head collard greens, stems removed and finely shredded
1/4 head or 2 cups shredded red cabbage, stems finely chopped

Add broth, Not Beef, garlic powder, liquid smoke, onion, and bacon to large pan with lid. Simmer on low heat until Not Beef dissolves. Add shredded collards, oil, and red wine vinegar.

Reduce until collards are a deep green and cabbage is deep purple.
