Okra Gumbo

 I developed this gumbo recipe to showcase this tasty vegetable.  When in a gumbo or stew, the sometimes slimy texture of okra is not noticeable.  

2 fresh carrots
1 medium yellow onion
5-6 large celery stalks
1 serano pepper
1 bell pepper
1 large tomato
6 cups okra
ground beef-style Seitan
1 can kidney beans
1 cup low-sodium vegetable stock (big box)
1/2 cup tomato sauce
salt-free creole or cajun seasoning
garlic powder
4 oz Cajun Chef hot sauce

Chop carrots, onions, celery, serano, bell, and tomato.  Pour stock into a deep pan or wok.  Add 4 oz Cajun Chef, 1 tbs garlic powder, and 3 tbs creole/Cajun seasoning. Strain and rinse black beans.  Simmer veggies 10 minutes.  Cut okra in half.  Add okra and beans to simmer pot.  Add more Cajun Chef and Cajun seasoning to taste.

Serve over long grain and dirty rice.
