Epic Burritos

These burritos were uncontrollably good!  The filling may also be served as a side dish on it’s own. 

whole wheat burrito-sized tortillas
fresh guacamole
fresh salsa
mixed greens
fresh cilantro
quinoa
vegan cheese


Bean and Corn Filling:
lime juice
chopped cilantro
1 can Rotel diced tomatoes in lime and cilantro
2 cans black beans or pinto beans
1 can corn and peppers
1/2 cup diced jicama salt
1/2 pkg of taco seasoning

Mix all ingredients together.

Layer all ingredients in a burrito and fold.

Spread guacamole on tacos, add greens and cilantro, add bean and corn salad, add quinoa, sprinkle with cheese, serve with salsa.
