This recipe is based off one from Epicurious.com. I can’t take credit for it, but it sure is great!
1 cup mango, peeled, and cubed into 1/2 inch pieces
1 cup pineapple, peeled, and cubed into 1/2 inch pieces
1 red bell pepper, seeded and diced
1 yellow bell pepper, seeded and diced
1 medium-size red onion, diced
1 medium jalapeno, seeded and minced
1 tbs minced cilantro
1 tbs fresh lime juice
1 tbs olive oil
1-2 tbs sugar
Prep everything as instructed. Combine in a bowl and serve slightly chilled with tortilla chips.
