This is a fantastic salad dressing that goes well on everything, but is particularly tasty with tofu and edamame.
piece of ginger, maybe small enough to fit in the palm of your hand, peeled.
chunk of scallion, comparable to the size of the ginger
1 part lime juice
1 part Tamari or soy sauce
2 parts sesame oil
2 part rice vinegar or rice wine
Place all in a food processor or blender and blend until smooth.
