Flatbread Pizza

You won’t need Domino’s with this pizza.  

6” flatbread or pita rounds
6 oz tomato paste
2 fresh garlic cloves
handful of fresh basil leaves
1 tbs flax seed
1 tbs diced onion

diced tomatoes
diced artichoke hearts
grilled eggplant and red pepper in olive oil (available in deli at Whole Foods, Kroger Select, and Central Market), diced
diced black olives
vegan motzarella/parmesan mix

To make the pizza sauce, blend tomato paste, garlic, basil, onion, flax seeds and water together on high until smooth.  Spread sauce on flatbread, and sprinkle ingredients on top.  Cover with cheese last.  Bake 7-10 min on 375 degrees until flatbread is brown and crispy.
